Deciding What Food to Store Up On

With being so close to taking possession of our new mini-farm the one thing that is foremost on our minds is completing our emergency food storage requirements. Our goal for the remainder of this year is to increase our supply once again to a year's level. Over the years I have stressed to all the people that I meet of the importance of properly accumulating a sufficient supply of food for emergency purposes. Usually when I suggest this to a friend I am questioned on what to store up on.

Canning Supplies

Initially a family should store up on a two week supply of water as well as a years worth of food as a bare minimum. Add to these storage supplies the necessary clothing for each member and enough fuel for your home to last for one full year. Don't forget a well stocked first aid kit which can be a life saver in the event of a disaster. When storing up on foods always stock up on those groceries which you eat and never simply take the advice of others as to the needs for your family.

Canning Supplies

In order to start your emergency storage supplies begin with the immediate necessities than slowly increase your supplies as your funds allow. Concentrate upon the essential foods necessary to survive such as your grains, cooking oils, legumes, dairy products, sugar and salts.

Many people think that a year's supply of food is nothing short of an overkill but think in terms of not merely being prepared for a natural disaster but also the possibility that you may lose your current means of support. In our loose economy anything is possible and frequently situations like this are likely to occur. In addition, over a period of weeks you will be amazed at how quickly with little effort your supply of food starts to increase.

To prepare our family we have been placing much of our bulk supplies in secure quart jars in order to prevent damage from rodents or insects. We use a combination of oxygen absorbers and bay leaves for this purpose. As an example, my wife just finished opening and properly storing a twenty-five pound bag of sugar. To do so she cleaned a dozen canning jars and after they had dried she filled each full of sugar. Next the lids were tightened onto the jar. Keep in mind that with any types of sugar neither oxygen absorbers nor bay leaves are necessary. Our goal for a family of three for one complete year is as follows:

In the way of grains we plan for the following amounts to hold us over.

Wheat - 450 lbs Flour - 75 lbs Corn Meal - 75 lbs Oats - 75 lbs Rice - 150 lbs Pasta - 75 lbs

In all total we will end up with approximately 900 pounds of Grain products. In our case however we have increasing our stored supply of flour, rice and pasta while still maintaining the same overall figure.

The same principle holds true of your cooking oils as well.

Shortening - 12 lbs Vegetable Oil - 6 gal Mayonnaise - 6 qts Salad Dressing - 3 qts Peanut Butter - 12 lbs

Here we come up with a total of 39 pounds. As we did above we modified these figures to account for our family's tastes and desires. We substituted olive oil for vegetable oil for two reasons. One, we prefer the later and the olive oil has a much longer life expectancy. Additionally, we will likely increase our peanut butter count since it is an excellent source of protein.

Now let's discus the legumes, these are pretty much universal and are fairly inexpensive for a family to start storing.

Beans, dry - 90 lbs Lima Beans - 15 lbs Soy Beans - 30 lbs Split Peas - 15 lbs Lentils - 15 lbs Dry Soup Mix - 15 lbs

These figures provide us with a total of 180 pounds of legumes. Since we are not big fans of soy beans these would naturally be replaced with other selections. Additionally we would prefer to create our own soup mixes.

On the topic of sugars we find the following potential selections at our disposal.

Honey - 9 lbs Sugar - 120 lbs Brown Sugar - 9 lbs Molasses - 3 lbs Corn Syrup - 9 lbs Jams - 9 lbs Fruit drink powdered - 18 lbs Coffee and Tea - 30 lbs Flavored Gelatin - 3 lbs

We calculate a total of 210 pounds for this category. Within this group of foods we encounter the powdered fruit drinks and the caffeine products. Since we are a coffee and tea drinking family we have include extras in this area.

For dairy products we have:

Dry Milk - 180 lbs Cheeses - 10 lbs Other - 39 lbs

In the above listing the category of other includes such nice to haves as sour cream, butter, etc. We have several powdered cheeses such as yellow and white. Combined with pasta these cheeses do well for a macaroni and cheese meal.

Your cooking essentials are listed below.

Baking Powder - 3 lbs Baking Soda - 3 lbs Yeast - 15 lbs Salt - 15 lbs Vinegar - 1.5 gal

I would like to say a few words on the essentials listed above. We have personally increased the amount of vinegar which we store and the salt. Both can be excellent preservatives when used the right way. Don't forget to add spices of your choice to the list also. Lastly, we have water and bleach. 42 gallons of water would be the least amount that you would want to store for a two week use while 6 to 10 gallons of bleach should be adequate for one year.

There you have a great start for your food storage needs. You can personalize the list as you see fit. Good luck and keep prepping.

Canning Butter in Your Kitchen

No home storage is complete without the addition of an emergency supply of butter. Granted you can easily store your pound packages of this dairy product in your freezer however there are several disadvantages to this solution.

Canning Supplies

First this method of butter storages uses up valuable freezer space which could have been better utilized for other products, secondly, during emergency situations and the likelihood of electricity loss you risk losing all your butter supplies.

Canning Supplies

There are several ways you can accumulate your emergency butter supply. If you have unlimited funds at your disposal you could purchase the 12 oz cans of butter commercially for approximately .00 per can. However, if you are cost conscious as I am you are likely to make your own canned butter. The process is fairly simple and offers an attractive alternative from the high retail cost of ready-made products.

I would like at this time to caution my reads to the fact that the US Department of agriculture does not endorse home canning of butter and dairy products. With that said let me continue on to explain the entire process.

You can use any butter which you have access to. It does not have to be the most expensive versions but must be butter and not margarine. Watch either for grocery store sales or you can purchase a multi-pack of four pounds for a little over two dollars per pound at your local SAM's wholesale club. Keep clearly in mind that with the butter of lower quality you will be required to "shake" the jars more but the final results will be the same.

Start by heat your pint jars for 20 minutes at 250 degrees in your oven. Do not place the rings or seals in the oven with the jars. You will find that one pound of butter will yield slightly more than one pint of final canned product. You can use your roasting pan for easy removal of the jars from the oven.

While you are waiting for the jars to get sterilized you can start melting the butter slowly in a pot. Keep the temperature low enough that you bring the butter to a slow boil. Make certain to stir the bottom of your pot often in order to prevent the butter from burning. Finally reduce the heat and simmer the mixture for an additional 5 minutes. You could simmer it slightly longer if you so desire and it may reduce the amount of shaking at the end. Place your jar lids in another pot and bring the water to a rapid boil. Leave the lids in the water until you need them.

When you are ready to fill your jars begin by stirring the butter starting at the bottom of the pot and working your way towards the top. Use a small ladle and scoop up the butter placing it carefully in the prepared jars. Canning jar funnels are especially useful for this part of the procedure.

As with any canning process leave ¾ of an inch head space in each jar. This will aid in the upcoming shaking process.

Wipe off the rim of your jars and adjust a sterilized lid from the simmering water pot onto each jar. As the jars start to cool the lids will seal and you will hear the familiar "ping," sound. While the jars are still warm, but able to be safely handled, shake them every so often. You will notice that as they are cooling down the butter inside is separating. Continue shaking until you see a consistent texture in the jar.

With the jars still slightly warm place them in your refrigerator. As they start to cool continue to shake them every five minutes until the contents begin to emit the lovely glow of real butter at which time you should leave them in the refrigerator for an additional hour.

Your canned butter should store successfully for at least three to five years and possibly longer if stored in a cool, dark location. Since canned butter will not melt a second time once you open one there is no need to refrigerate the contents assuming it is consumed within a reasonable length of time.

A Treasury of Old Canning Jars

Just about every state has what is known as a "Freecycle Group" on the internet. These group members offer various household items up for others in an effort to cut down on the waste found at the local landfills. In general, these programs work out very well and the members are usually self governing in that they offer just as much or more then they request.

Canning Supplies

If you happen to be someone who is interested in home canning of your summertime fruits and vegetables then these groups can offer you a gold mine in canning jars. Visit your local Wal-Mart store or any merchant that sells canning jars and you will readily see how much money you can save with the "Freecycle Groups" products.

Canning Supplies

The major problem involving these types of jars is cleaning them. Frequently, a good washing may do the trick, however sometimes you encounter a collection of very stubborn jars which simply do not want to come clean. Although you may be thrilled to obtain all these needed jars at no cost after attempting desperately to clean up several dozen of them you can get pretty disturbed.

Now, you may be wondering how you would go about cleaning all these jars. To start with, you should fill your sink with some very hot soapy water and soak them until the water they are soaking in has cooled down to room temperature. Any common dishwashing solution will work for this task. You might even wish to pour in a slight bit of "Clorox Bleach" as well. Follow that with a swift cleaning using a stiff, nylon dishwashing brush on each and every one of them, making certain to keep your hands on the outside of the jar. The reason I suggest that you maintain your hands outside the confines of the jars is that many times these older jars become brittle and an accident tap from your brush may cause it to shatter into hundreds of small pieces. These broken pieces of glass could give you a very nasty cut, so you would do well to play it safe. After a hand cleaning you should then place them in the dishwasher and run the complete lot of jars through the rinse cycle for several good cleanings, this way they are assured of them being sanitized properly.

Since the jars may have been sitting around for a good number of years they likely have food debris built up on them as well as possible rusted rings attached. The main object here is to avoid that metal to class contact that could cause scratches. Although you may be tempted to make use of a Brillo pad while cleaning them up, you should try to avoid its use when possible. The use of these types of cleaning products could create small scratches upon the jars and eventually lead to breakage. In their place you may wish to employ the flat, green nylon scrub pads.

There is a commercial product known as "Barkeepers Friend" and this item is nothing more then a mild abrasive which can easily remove old rust stains from just about everything imaginable. You will find the cleaner at your local Wal-Mart store near the Comet cleanser and related items. As an added bonus, you can use the "Bartenders Friend" on all your stainless steel pots as well as your sinks. It is safe to use on any sort of glass product ranging from glass baking dishes such as those from Anchor Hocking to the popular Corning cookware. In the event that you find built up rust on the necks of the jars you could use a toothbrush or a soft rag to clean them up.

So as you can see it may be well worth your efforts to grab up on those treasures offered in your local "Freecycle Group".

Home Canning Equipment

The public outcry over the food practices in our country is spurring a renewed interest in home canning...and for good reason! Canning your food at home insures nothing toxic goes into the food you and your family consumes. And it also tastes better! That's a win/win in my books.

Canning Supplies

Don't let the thought of canning intimidate you. It's not as hard as you may think. You also won't have to invest your life savings to start a home canning operation in your home. In fact, most of the equipment you need you probably already own. Here's a list of both the basic essentials as well as a few other things you might want to pick up as time goes by:

Canning Supplies

Essentials:

Mason Jars

You can often find these glass canning jars at garage sales for cheap. Run your finger around the rim of the jar (when buying used) to make sure you don't feel any chips or dents. Even the slightest chip will keep your jars from sealing. Most grocery stores sell jars in various sizes by the case during the summer and fall canning seasons. (NOTE: Don't use recycled mayonnaise and other condiment jars for canning--use only mason jars created for the purpose of canning.)

Seal able Jar Lids

While you can buy the jars used and re-use them over and over, jar lids need to be new. These little metal lids have a rubbery band around them that once hot, create the seal between the lid and the jar. If you're buying new jars by the case, these lids will be included. If you're re-using old jars, the lids can be purchased separately and are inexpensive.

Jar Bands or Rings

These metal rings screw down on the jar to create a snug fit between the jar and the lid. They can be re-used and don't have to be purchased new each time. If you find your running short on rings, you can take them off totally cool jars that have already been canned and sealed. You don't have to store them with the bands screwed on. Again, if you're buying new jars by the case, the rings will be included in the package, but you can purchase them separately as well.

Boiling Water Canner

This doesn't have to be as intimidating as it sounds...you can use a big stockpot or other large, deep sauce pot you already own. I canned my own jams and jellies for YEARS before I invested in a water canner (that I found at a yard sale for !) The pot you use needs to be large enough to have the jars you're canning completely submerged (with about 2 inches or more of water above the jar tops) and with enough room around the jars that water can move freely).

If you're using a saucepot from your kitchen, it needs to have a properly fitting lid to go with it. You will also need to either buy a wire rack (you can buy them separately in the same section as the jars in most stores) or create a homemade solution yourself so that your jars are not sitting on the bottom of the pot unprotected.

A great homemade solution I used was placing as many jar rings side by side on the bottom of the saucepan as would fit. The jars then sat on top of the rings, creating space between the pot and the jar bottoms.

Kitchen Utensils

Things like measuring cups, wooden spoons (long handled ones work best), ladles, funnels, spatulas, etc.

Non-essentials (but very helpful additions):

Jar Lifter

This tongs-like simple contraption is designed especially for safe jar lifting from boiling water baths when the jars are too hot to touch. Although it's not an essential, it's hard to can without it (I've used regular kitchen tongs before, which are tricky. The wet jars tend to want to slip from your grip and dropping a glass jar full of boiling hot food is something you definitely want to avoid!)

Lid Lifter

This is a little plastic stick with a magnet on the bottom for ease of lifting your jar lids out of the warm water you've got them sitting in while you're canning. This little lifter is totally NOT essential, but very inexpensive and quite slick. I didn't have one for years, but after I got it, I wondered why I didn't spring the 2 bucks a long time ago. I love it!

Bubble Remover and Headspace Tool

If you want to be sure about the headspace you're leaving, there's no better way than measuring it with a specially designed device to get the job done. Some people swear by them, but it's never been something I've used.

Pressure Canner

This is the most expensive investment of the whole canning process, but you can pick one up for less than .00 and it will last forever, at least! (I have one passed down from my grandma).

Although I didn't put it in the MUST HAVE section, it is a must have if you plan on canning low-acid things like most vegetables, meats, etc. However, there are many, many recipes you to can that don't need a pressure canner, so it's not essential for all canning. My suggestion is that if you're new to canning, try your hand with the water bath method of canning first before you dive into recipes that require pressure canning.

Yet Another Gotcha: Canned Food

My Bigger Half and I are so clever! Yes, it's true, we are. We learned about the problems with using plastic for drinking water from, storing food in, and using in our toys and shopping bags, and quite, or at least greatly reduced, our use of plastic. I sat on my smug laurels, and my backside, gloating over how good we were, missing one area we'd missed. You have probably missed the same thing because it's not visible to you either.

Canning Supplies

Canned foods. (Oh no! My emergency food supplies are mostly canned.) Well, if they are canned how are we missing the plastic link? Because most cans used in food storage have a plastic lining. And not just any plastic lining, but with BPA and phthalates!

Canning Supplies

BPA and phthalate are the worst of the plastics -- well, probably not the worst, but awfully darned bad -- to have in contact with your food. If you were eating fresh, whole foods this wouldn't be of the least concern to you. But some of the foods we cherish are canned. And, if you are stocking food in your larder for emergency situations, you will rely on canned foods too, unless you are more dedicated than even I am and make all of your own preserved food items, thus controlling what they are stored in.

Surely, you must be thinking, that little bit of plastic -- if it's even there -- can't be all that bad. Or can it? I even ask myself that question, and challenge My Bigger Half to consider the issue. Then I began my research in earnest.

A Bit About Plastic
BPA and phthalates are found in canned foods and sodas And it's also found in food microwaved in plastic. You'll find it in lots of types of plastics, but I'm focusing on canned foods in this article so will live only the warning of all of the plastics in your life. DEHP, a phthalate, is added to plastic to make it more flexible.

BPA and phthalates are endocrine-disrupting chemicals and impact the hormone system. BPA mimics estrogen, and can effect the developing brain, reproductive system, and mammary and prostate glands. Some phthalates have been found to interfere with reproductive development, especially in men. Using products that are free of those two families of chemicals goes a long way toward cleaning up your body, but going further will help more. Cut as much plastic out of your life as possible because all plastics contain estrogenic activity (EA) and harmful chemicals that leach into your food and body.

One study found that by eating only whole, natural foods -- no processed foods -- BPA and DEHP levels dropped by 50 and 60 percent within two days. The levels didn't drop lower because of the amount of plastics in our lives that we come into contact with regularly. The implication is that people can reduce their exposures by eating foods not purchased or stored in plastic or cans, and by choosing restaurants that serve only whole natural foods.

Another study found almost all commercially available plastic products leached chemicals having detectable EA. It didn't matter what product, type of resin, or retail source was tested, even those claiming to be BPA-free, they all released chemicals mimicking estrogen. This is important to know because the "non-BPA" claims probably don't mean you are avoiding EA chemicals, only BPA.

Many of the estrogen-mimicking plastics have been banned around the world from children's toys, bottles, and sippy cups. But laws haven't been passed protecting adults from the same chemicals. Bureaucratic and political delays keep proposed legislation on hold, even with the EPA campaigning about the hazards of the problems. If our laws aren't protecting us from the obvious plastic hazards you know we aren't being protected from the hidden hazards, like those found lining cans.

Don't wait for the laws to pass, start ridding your life of plastic now. The hardest one to get rid of though, if your pantry is like mine and filled with a wide variety of canned foods, is the plastic lining cans. Man, this isn't going to be easy. Where are we going to find sliced olives for My Bigger Half's fabulous stacked enchiladas?

Back To Canned Foods
Tomatoes, being highly acidic, are one of the canned products that have relied on BPA-containing linings to keep the integrity of the can. Any canned food containing tomato (pasta, canned ravioli, tomato sauce and paste, and stewed tomatoes, for starters) should be high on your avoid list. Sadly, even organic tomatoes have BPA-plastic lining.

There are some canned goods coming out with BPA-free linings, but the question becomes what are cans lined with? Could it be one of the plastics mentioned above that are just as bad at leaching estrogen-mimicking chemicals? My cynical side says, "Probably".

And just to add insult to injury, The Environmental Working Group reports evidence that "low doses of BPA spur the formation and growth of fat cells, the two factors" are driving obesity. Especially abdominal fat. Who needs help with that?!

It's up to each of us to clean up our own lives, and of the lives of the people we care for. Start by avoiding plastic packaging, which is really hard. It's become increasingly difficult to find prepared foods in glass containers, though even then the plastic lining many glass jar lids have contain these EA chemicals. And canned alternatives of course don't help.

Where does that leave you? I guess it depends on how seriously you want to take this health threat. Avoiding plastic is an easy, flip answer, but not a realistic alternative, unless you are going to do all of your own canning or eat only fresh foods. And rid your home of all plastics. You can avoid drinking hot liquids from plastic cups, given the heat speeds the leaching of EA chemicals from the plastic. You can reduce plastic wrapped foods. You can eliminate most canned foods, maybe. Or, you can contact your Legislators and urge them to get on the stick about passing the bills requiring the most harmful chemicals be banned from our lives.

An off-topic concern, but one to get your mind reeling, is the question about other products in your life. What about your toiletries (toothpaste, shampoo, lotions, makeup, deodorant, lip balm, for starters), sandwich bags, dairy containers, and other items you may buy regularly? And your non-organic foods and even your water supply may be suspect. There's only so much you can do without talking to your Legislators and Representatives.

Don't stop your research into the topic or your solutions with this article. It's my goal to raise the issues I face, share my research, and voice my decisions and intended actions. I hope you'll share your thoughts and actions so we can have a valuable dialogue and learn from each other.

Freshwater Pearl History

China is the number one producer of freshwater pearls, followed by Japan and the United States. Over 35 years ago, China's highly lustrous rice pearls began appearing around the world, and since then the freshwater pearl industry has taken off.

Canning Supplies

Cultured freshwater pearl farmers in China have long been known to be able to produce mass quantities of cultured freshwater pearls at a relatively low price. However, advances in farming and culturing methods have improved the quality of the pearls. Until the last decade or so, most Chinese freshwater pearls were low-quality. Today, not only can they rival their saltwater counterparts, cultured freshwater pearls are produced in more popular colors and shapes.

Chinese Pearl Farming History

China has been in the pearl farming business since the 1200s! Ancient manuscripts describe blister pearl culturing methods that are very similar to the ones used today. Blister pearls are formed when a nucleus is inserted between the mussel's mantle and its shell. What results is a pearl that grows attached to the shell. Eight hundred years ago, the Chinese cut these pearls from the shells to sell as ornaments.

In the 20th century, little was known about the Chinese pearl industry until around 1970 when producers flooded the market with what were known as "rice pearls." They were small and wrinkled but often were lustrous and iridescent, so these tiny gemstones found their way into many jewelry boxes.

Even 30 years ago, approximately 2 percent of the Chinese freshwater pearls were of high enough quality to compete with the freshwater pearls produced by Japan and the United States. There were enough of these inexpensive, high-quality pearls based on volume to put pressure on China's competitors to improve their product.

The Japanese had success culturing round freshwater pearls for decades, and the Chinese freshwater pearl farmers began to focus more on quality than quantity. They soon began producing round, near-round and baroque freshwater pearls. Popular button and oval shapes, known as "corn" and "potato" pearls, became more common.

The industry continues to grow, but at a slow pace. This is chiefly due to the long period it takes to produce a freshwater pearl. Pearl development takes two to six years, which is a long investment period between nucleation and market.

Farms of Today

Most of China's freshwater pearl farms are located in the valleys of the Yangtse River, as well as its tributaries. Most farms are located within 300 miles of Shanghai. There are thousands of family-run operations and a significant number of sophisticated, large- scale farms. Most farms, no matter how large, grow other products, whether it is ducks, rice or fish. It's a symbiotic relationship between raising the mussels that produce pearls and other crops - powdered shells fertilize crops and manure nourishes mussels or the fish needed in the mussel-raising process.

The Chinese pearl farms face many hazards - floods, industrial pollution, weather and parasites. Another challenge is keeping ponds made for the mussels. Ponds fill in with mud anywhere between five and 15 years. The fish that live near the bottom and the mussels, left to develop pearls near the surface, have to be moved to another pond. The resourceful farmers either use the filled in pond for agriculture or will remove the mud and start over raising fish in the revitalized pond.

About 10 different species of mussels are nucleated to create pearls. These days, most use Chinese pearl farmers use H. cumingi mussels. The use of H. cumingi increased once farmers began focusing more on quality rather than quantity. However, C. plicata, which produces pearls the fastest, is still a popular choice.

Mussels are either farm-raised or bought at local and regional hatcheries. H cumingi is usually nucleated when it is six or seven months old. Nucleation occurs year-round, but many farmers choose to implant in April and May or August through October to take advantage of the best weather.

The nucleator makes 20 to 25 tiny incisions in two rows in mantle tissue in one of the mussel's two valves, then inserts donor mantle tissue into the incisions. Turning the mussel over, the nucleator repeats the surgery.

Two to six years later, at harvest, the mussel will yield 30 to 40 cultured pearls. Harvest usually occurs in November, before winter. Pearls range from 2mm to 13 mm, but big sizes are rare. Most measure between 4 mm and 7 mm are mostly solid nacre. Some pearls will be hollow in the middle where the donor mantle tissue was, which will appear when the pearls are x-rayed.

After harvest, farmers return some of the mussels to the ponds if they produced good quality pearls. The pearl sac has already formed so no new mantle tissue has to be inserted. Second generation pearls aren't usually as quality but they are usually good enough to be marketable.

Freshwater pearl farms try to increase the odds of round or near-round pearls by using a species of mussel more likely to produce a round pearl, maintaining quality water and inserting square pieces of donor mantle. The shape of the mantle tissue has a lot to do with the shape of the pearl that is produced, and the Chinese freshwater pearl farmers have found that perfectly square donor mantle is more likely to produce a round pearl. Only about 2 percent of the pearls end up round, but since the Chinese produce hundreds of tons of freshwater pearls, there are still an ample supply.

Some gemologists believe the best round or near-round freshwater cultured pearls are indistinguishable from the finest white Akoya cultured pearls. The freshwater pearls sell for much less.

The farmers have also determined what donor tissue is more apt to produce a specific color pearl. Chinese freshwater pearls are white, cream and other colors like yellow, orange and purple.

After harvest, the pearls are processed, which usually means bleaching. To restore luster afterwards, processors mix the pearls with grit, bamboo, walnut shells or wood and tumble them in machines.

Sometimes during processing the pearls are dyed, often to make them black. Other pearls are radiated or color-treated to create a more intense hue.

The Chinese freshwater cultured pearl industry continues to grow, thanks to changes in the government's economic policies, which allow businesses greater freedom. The country has some geographical advantages, too. China is a large land mass with an abundance of rivers, streams and lakes, plus a wide variety of native mussels. With centuries of culturing experience and a low-cost work force, China will most likely continue to lead the freshwater pearl industry.

The Proper Way to Sterilize Jars For Canning

Certain of us are attempting to find more ways in which we might save our money by doing certain things without anyone's help. One of the most different ways that you have the power to attempt to save money is by growing fruits and vegetables and making different foods that you are able to place inside of a jar and preserve for months at a time. This is done through a procedure best-known as water canning.

Canning Supplies

Water canning is a procedure that food makers utilize to help to maintain the food they sell and make sure they are fresh and edible while they are on the shelves in stores and homes. Although it may sound involved it is rather an easy procedure that anybody can partake in. One of the most serious things you should learn when canning your own food is how to sterilize the jars.

Canning Supplies

Each time that you are canning foods you should purchase brand new jars and lids. Ensure that you buy the types that can be held in extremely hot temperatures. Lids especially have to be new because they do not have the ability to seal again once they are opened.

You will have to wash every jar, lid, and ring in hot water with soap. This needs to be completed even on the new ones and afterwards have to be rinsed thoroughly.

Place water in a pot and boil the water on top of a stove. Utilize long tongs to set the canning jars and lids in the water when it commences to boil. Keep them in there for a total of five minutes. Use the tongs to remove the jars and lids. Place them on paper towels and let them to air dry. Make a point that there is no water within the jars and that they are right side up.

Soil Steps Treatment For Best Plant Growth

Most of us have been discouraged at one time or another because a favorite house plant died or did not look its best. Perhaps the use of unsterilized soil was to blame.

Canning Supplies

Proper soil treatment, either by heat or chemicals, can destroy all kinds of soil-borne pests: fungi, nematodes, bacteria, insects and weed seeds.

Canning Supplies

Many common ailments of house plants can be traced to using soil or pots contaminated with pests which rot, chew and suck away the roots, crown or bulb. This prevents water and nutrients from reaching the leaves and flowers. Such plants may appear unhealthy or may wilt, wither away and die. The same soil-borne pests may rot seeds or cuttings, or cause young seedlings to suddenly wilt and topple over (called damping-off).

Soil treatment can be regarded as cheap insurance that your house plants have a fair chance to grow, look their best, and bloom.

The easiest and most effective way to disinfect your soil and pots is by heating. Heat treatment at the right temperature and for the correct length of time destroys all five major kinds of pests, and leaves no long-lasting toxic residues in the soil, as some chemical treatments occasionally do. But be careful to avoid overheating, particularly with steam or dry heat. Otherwise the physical structure of the soil may be broken down and excess soluble salts may be released, resulting in harmful side effects.

Heat Sterilization

To heat your soil properly, follow these steps:

1. Prepare the soil as for planting. Add the sand, peat moss or other materials you wish in the final potting mixture. The soil should be loose, free of coarse debris and lumps, and just moist enough for planting. Don't have it so wet that it sticks together when squeezed in your hand.

To be sure (the first time) you have done a thorough job of sterilizing, scatter in a handful of oat or ryegrass seed while mixing the soil. If seedlings pop up after sterilization, while the soil is airing, you know that you slipped up somewhere. Incompletely sterilized soil is frequently more hazardous to use than non-sterilized soil. Harmful microorganisms have less competition and hence grow quickly throughout the soil and attack plants.

2. Spread the soil from one to three inches deep in a cooking pan or wooden flat and bake in a 200 degree oven for one hour. Clay pots, wooden containers and pot labels can be placed on top. They should be sterilized, too. Plastic pots are easily sterilized by washing in hot, soapy water. The soil can also be put directly in the pots and baked in the oven as above.

A home canning-type pressure cooker can also be used or the soil can be put on a rack above boiling water in a large, covered wash boiler or kettle. If a pressure cooker is used set the valve at ten pounds pressure. For three-inch pots of soil heat for ten minutes; four-inch. 15 minutes; six-inch, 30 minutes. If using the boiling water method without steam pressure double the time intervals.

3. After heat sterilization stir the soil' thoroughly and water it for several days before planting. Be careful not to recontaminate the soil with microscopic pests by avoiding dirty surfaces or utensils and diseased plant material.
