A. It depends on what recipe you are canning and your family's needs.

The first thing to take into consideration is how bulky the food is that you are canning. Condiments, jams, jellies, and cut up fruits and vegetables can be canned in regular mouth jars. However, you will want to use wide mouth jars for foods such as pickles and whole or halved fruits and vegetables. The wide mouth of the canning jars will make it easier to remove that kind of food from the jars.

The second thing you will want to think about is how much of the recipe you will want open at one time. Most likely your family would be unable to consume a quart of jelly before it would go bad in the refrigerator so, it is best to use 4 oz and 8 oz jars for jams and jellies. Specialty items such as special sauces, ketchup, and relishes also work well in the little 4 and 8 oz jars.

When you are canning fruits and vegetables just think whether you will be using a pint or a quart at a time and then can them in the appropriate jars. You may want to split a recipe between pint and quart jars. This will allow you to choose how much of a certain food to have open at one time. This is especially helpful for time when you have company over and will be using more of a certain type of canned food.

Finally, if you are thinking of giving some of your home preserved foods as gifts, you may also choose to use smaller jars.  This way you can give a variety of your canned goods as a gift.

Home Canning - Get a Jump Start on the Canning Season - Stock (and &quot;Stalk&quot;) Up Now!

It is never too early to start preparing for the canning season. Before you know it, various fruits and vegetables from either your garden or a farmers market, will be ready to be preserved and put in canning jars. Now is the time to assess your canning needs and stock up on those needed supplies. Whether you are a veteran canner or a novice beginner, now it the time to stock, and "stalk", up on canning jars, canning lids, and other canning supplies. Most canning supplies, such as lids, jars, canners, canning salt, pectin, etc., will be hitting the grocery shelves in the month of May. This is a good time to start "stocking" up on those supplies. Many second hand stores will begin to rotate their "seasonal" items, which includes jars and canners, very soon. Also, many folks are doing their spring cleaning and, in some cases, getting rid of excess jars and canning supplies. This is why now is a good time to "stalk" these precious supplies. Keep your eyes and ears open for great deals!

Here are a few other tips and suggestions to assist you in getting a jump start on the canning season:

1. STOP throwing out or recycling those mayonnaise jars and pickle jars--they are GREAT for canning, especially for fruits and juices!

2. SHOP at your local thriftstore and look for jars, canners, or other canning accessories. Do not wait until the canning season. If you do....they won't be there!

3. If you do find some jars at the 2nd-hand store, carefully examine the jars for cracks and chips. Run your finger over the mouth of the jar to ensure it is smooth and free from imperfections.

4. DO go to estate and garage sales and inquire about canning supplies--often you will hit the "mother-lode" and save BIG TIME on jars, etc.

5. Put out the word at your workplace, church, neighborhood, that you are wanting canning jars, etc. You will be surprised at the response! People have basements, garages, and attics filled with empty jars waiting to be filled by YOU! (and often they are FREE!!!!!)

6. Each time you go to the store, pick up 1-2 packages of canning lids. Lids can be expensive; the cheapest source I have found is at Wal-mart. Accumulating a good supply of lids over a period of time helps in the overall cost. When the canning season is upon you, you can spend your money on the produce, and you can have the peace of mind of knowing you have plenty of canning lids on hand.

7. Be Ready to look for canning equipment sales towards the beginning of summer! Also, be aware that many stores start closing out canning supplies in late August/early September...a great time to stock up for the following year!

It may not seem the time to be thinking about canning, but there's no better time than now to prepare! So, good luck and HAVE FUN!!! You're way ahead of the game!

Canning is becoming very popular these days with everyone trying to save money and eat healthier, less processed foods. Many people may be intimidated by canning. It is relatively simple if you read the recipe, use the proper canning supplies, and follow these three important canning tips.

Tip #1 - Always use brand new lids - It is important to always use brand new lids when canning. Some people will try to reuse old lids but this one of the main reasons why a jar will not seal after the canning process.

Tip #2 - Use Glass Canning Jars - Remember to use glass jars that are specifically designed for canning. Most of these jars are made by the Jarden Company and sold under the brands Ball and Kerr. Do not try to use one-time use only, commercial jars for canning. These are jars that you may purchase food such as mayonnaise, spaghetti sauce, or jelly from the store. Even if the band does screw on to the top of these jars you are not ensured a proper fit and most likely the lid will not seal on these jars.

Tip #3 - Do Not Over-tighten Bands - After you place the lid on the jar that you have just filled with your food contents it is time to apply the band. Only tighten the band so it is finger-tip tight. Many people over-tighten the bands and this can cause the lids to not seal after process. Over-tightened the band is also a cause of buckling lids.

So, follow these three important tips to ensure you get a good seal when doing your canning.

The canning of foods will sterilise and seal the contents so that they will be preserved for future use. Food is place into glass or tin containers and then hermetically sealed. These are then heated so as to destroy the micro-organisms that spoil the foods. It is a process which was first invented in the early 19th Century and is still very popular today. Many products which we buy at the store are canned to preserve their freshness. Canning has always been a very popular way to increase the shelf life of products at home and there are many companies who produce specialist jars for this purpose. One of the longest standing manufacturers of canning equipment is Kerr. Not only have they produced their glass jars since the early 1900s but they have published Kerr Canning recipes in their highly respected books.

During the depression, canning became a vital part of every day life, with many people dependant on the preservation of foods for the winter months. Kerr set up an educational program to teach the principle of canning and to show how the process could ensure a steady food supply even when fruit and vegetables were out of season and difficult to get hold of. They had promotional cars which toured the country giving advice and advertising their products. Many small books were distributed to housewives showing the science of canning and giving Kerr canning recipes for them to use at home.

As a part of their drive to bring canning into our homes, Kerr also gave many demonstrations of canning techniques and even installed some model kitchens in the 1930s. The company did an excellent job in capitalising on the great depression. The timing was good for Kerr as many people were suffering from job losses and reduced incomes and were finding that times were hard. The preservation of food was becoming an important fact of life and as a relatively new company, they were able to establish their glass canning products as being indispensable. The Kerr canning recipes were a tremendous help to many people during the depression and enabled families to preserve foods much more easily and with increased safety.

Kerr were marketing two main products; the economy jar and the self-sealing mason jar. The latter was well known for its two piece lid. As these could create a vacuum at the neck of the jars, canning could easily be done in the home and Kerr Canning recipes became a great success.

The jars are still available today, although the original plant in Sand Springs Oklahoma was closed when the company was bought by Ball-Incon in 1991. Ball has continued to produce their canned food recipe book and it is still possible to get hold of the book of Kerr Canning recipes from second hand book stores and on the internet.

Q. Can I reuse my canning lids?

A. No, you always want to use brand, new lids each time you do home canning. Using new lids is the only way to ensure getting a proper seal on your jars.

Q. How can I tell if the lid is sealed on the canning jar?

A. After you have processed your canning jars full of food you will want to allow them to cool. During the cooling process you will hear a ping. This is an indication the lid is sealed. The lid will also be depressed in the center. If a canning lid is still raised and when you press on it, it goes up and down, then you do not have a good seal. Another way to check for a good seal is to remove the band and lift the jar using only two fingers on the edge of the lid. If the lid stays on you have a proper seal.

Q. How can I get a good seal on my canning jar?

A. First, make sure you always use brand, new lids. Second, wipe the rim of the jar after you have ladled your food into the jar and before you place the lid on. If there is any food residue on the rim you will not get a proper seal. And third, do not over-tighten the bands. Use only your thumb and one finger when screwing on the bands to avoid tightening them too much. Bands that have been over-tighten can also cause a jar not to seal properly.

And always process jars the correct amount of time to give you a safe finished product. Make sure to adjust processing time based on your altitude.

3. Never Over-Tighten the Bands - When you are screwing on the bands before processing, be sure not to over-tighten them. You will want to adjust them just so they are finger tight. A good way to make sure you do not over-tighten the bands is to screw them on using only your thumb and one finger.

The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. Nonabrasive cleansers are best for cleaning this aluminum pressure cooker, though occasional use of a fine metal polish will help the exterior keep its shine. The lid of the Presto 23-quart pressure canner is not immersible. In addition, the sealing ring should be removed after each use to allow cleaning of the inside rim of the lid. The dial gauge is delicate; detailed care instructions are found in the accompanying booklet. The vent pipe is simple to keep clean with a small brush or pipe cleaner, and both the air vent/cover lock and the overpressure plug are removable. Canning jars can be used again and again. You will want to inspect them before each use for any cracks or chips, especially around the rim of the jar. If you have any old canning jars that are colored do not use them for canning. They probably have lead in them because that is how they used to make the colored glass.

Canning bands or rings, as they are sometimes called, can also be used from season to season. You will want to make sure they have not been bent. Test each one to make sure it screws on to a canning jar properly and it will be good to use again this year.

Canning lids should never be reused for canning. You will always want to use brand new lids when doing your home canning. You can, however, use old used lids when dry-packing in jars that you use for vacuum sealing.

Reusing your canning supplies is a great way to save money. Saving money is one of the main benefits of preserving your own food. If you give some of your canned goods to family and friends for gives throughout the year, don't be afraid to ask for the jars back when they are finished. They will certainly understand and they probably won't use them anyway unless they do home canning themselves.

Home Canning Supplies and Equipment - The Proper Equipment Needed For Successful Home Canning

I love canning food. I use pressure canning and also boiling-water bath methods for preserving our garden harvests, depending on what type of food is being processed. There are certain items that comprise your arsenal of home canning supplies and make the job much easier.

Canning Supplies

First of all, you need a canner. I personally use an All American Pressure Canner manufactured by the Wisconsin Aluminum Foundry. I love the wing nut locking system of this particular canner. I've owned some other pressure cookers and canners that had a plastic gasket seal. The seals eventually crack and wear out, requiring replacement.

Canning Supplies

With the wing nut system, there are no gaskets to replace. Just be sure to keep all of your canner parts together so you do not lose them, such as your pressure regulator, your pressure gauge, the wing nuts, etc. A pressure cooker or canner without a vent regulator is useless, but the part is very small and easy to lose. I keep the loose parts inside of the canner in storage so that the parts are always there.

You need home canning jars that are designed for this purpose. Some glass will crack under high heat, so purchase Mason, Kerr or Ball glass canning jars made specifically for pressure or boiling bath canning.

You will need metal lids and screw bands. The metal seal lids should be used only once and discarded when the contents are consumed. The screw bands can be used over and over again. The screw bands are removed after the contents cool and the vacuum seal is achieved, and the filled canning jars are stored with the metal lid only.

Equipment and utensils should be made of stainless steel or anodized aluminum. Avoid copper, brass, cast iron, and galvanized zinc as these materials react with salts and acids in the foods.

A typical equipment array might include:

o Colander
o Heavy duty pots and saucepans
o Knives, cutting board, potato or vegetable peeler
o Ladle and spoons (heat resistant)
o Measuring spoons and cups in various sizes
o Large sized mixing bowl capable of several quarts
o Funnel designed specifically for a jar
o Magnetic lid wand
o Kitchen tongs
o Dry kitchen towels
o Non-metal spatula (for removing air bubbles)
o Jar lifter (this is a very handle tool for safely removing jars from hot boiling water)
o Cheesecloth
o Strainer
o Thermometer (I use a candy thermometer)
o Labels (often included in boxes of canning jars)
o Permanent marker
o Spice bag (handy but I often make mine from muslin or cheesecloth)
o Accurate kitchen timer
o Kitchen scales
o Journal or notebook for recording recipes, making notes, etc.

There are other tools that make the job of home canning easier, depending on the types of food you plan to process. Food mills, grinders, jelly bags, slicers, blenders, corers, pitters, and other items can make your job much easier.

There are canning accessory sets available that are very affordable and contain most of the common items you need when you hot process foods. Home canning supplies are necessary to perform the job successfully and safely. These utensils and equipment usually last for years with proper care, so a wise small investment in the beginning is highly recommended.
