If you are new to home canning this year, like so many other people, you will want to follow these simple do's and don'ts.
Do's
Canning Supplies
1. Always Use Canning Jars and Brand New Lids - It is important to that you use jars that are specifically designed for canning. Also, make sure you use brand new lids. You can reuse canning jars and bands from year to year, but always use brand new lids to ensure a proper seal.
2. Always Check the Jars for Cracks and Chips - Before you use any canning jar, make sure you inspect it for any cracks or chips. Pay close attention to the rim of the jar. If there is a chip on the rim you will not get a proper seal after processing the jar.
3. Always Label Your Canned Goods - After your canned goods have cooled and they are ready to be stored, make sure you label each jar. Write the contents and the date canned on the lid with a permanent marker or on a canning label.
Don'ts
1. Never Pour Hot Liquid into a Cold Jar - You will need to heat your canning jars before pouring your hot contents into the jar. If you don't it is a good chance you will break the jar.
2. Never Adjust the Recipe - Following your recipe when canning is crucial for getting the best results. Using the proper amount of sugar in a jam or jelly recipe is very important. And always process jars the correct amount of time to give you a safe finished product. Make sure to adjust processing time based on your altitude.
3. Never Over-Tighten the Bands - When you are screwing on the bands before processing, be sure not to over-tighten them. You will want to adjust them just so they are finger tight. A good way to make sure you do not over-tighten the bands is to screw them on using only your thumb and one finger.
So, as you can see, if you follow these do's and don'ts you will have a successful canning season.

The USDA recommends pressure canning as the only safe method for low-acid foods such as vegetables, meats, and poultry. The Presto 23-quart pressure canner is more than adequate for any home canning needs.
